These Instant Pot Recipe: Cinnamon Muffin Bites are the perfect go-to when you don’t want to turn on your oven. It bakes in 15 minutes (with a 10 minute natural release). Great summertime recipe when you don’t want to heat up the kitchen but you want a quick batch of muffin bites.
Note: Silicone egg bite molds can be purchased at kitchen stores, amazon, Canadian Tire, etc. I happen to find one for $2.99 at a thrift store (took it home, put it through the dishwasher, and it works great).

Instant Pot Recipe: Cinnamon Muffin Bites
- 1 c flour (I used gluten-free)
- 1/2 c brown sugar
- 1 tsp baking powder
- Dash of salt
- 1/2 c milk
- 2 eggs
- 1/4 c oil
- Dash of cinnamon
- 1tsp chia seeds (optional – but good fibre!)
- Mix everything together.
- Put into pressure cooker silicone mold.
- Cover.*
- Add 1 c water to bottom of pressure cooker.
- Place trivet in pressure cooker on top of water.
- Put silicone egg bite mold (covered) on trivet.
- Set to 15 min high pressure. Sealed vent. Natural release.
*my silicone egg bite mold comes with a cover. You can use aluminum foil as an alternative. Tightly wrap foil over the silicone mold. You basically don’t want the steam getting into the batter.
I like one for breakfast (and makes 7 so perfect for me). I recommend when you don’t want to turn on your oven and you want a quick muffin bite.
