You will need:
- Cooked quinoa (cook according to package directions. I usually make 1 cup for this recipe. It works out to be 1 cup uncooked quinoa to 2 cups water – bring water to boil, add uncooked quinoa, reduce heat, and simmer for 15-17 minutes)
- sliced cucumber
- tomatoes (I use grape tomatoes – cut in half)
- red pepper
- onion
- olives
- feta
For dressing your will need:
- olive oil (or canola oil)
- red wine vinegar
- oregano
- salt
- pepper
Directions:
In a large bowl, combine cooked quinoa, cucumber slices, tomatoes, cubed red pepper, sliced onion, drained olives and crumbled feta. Stir to combine.
Make dressing. 1/2 cup oil + 1/4 red wine vinegar + 1 tsp oregano + salt & pepper to taste.
PARENT CLUB TIP:
Use an old, clean, jam jar to mix dressing. Also good for storage in the fridge if you make it ahead.
Pour dressing over salad and let sit for one hour (or make 24 hours in advance and store in airtight container in fridge).
Serve as main dish or side dish. Also, great for pot lucks. As you can see from the picture above, my kids like to take this salad for lunch…but just a quinoa + cucumber version..which is fine by me. Anything that’s not the usual sandwich is a good break from the school lunch routine!

I made quinoa once and yuck did not care for it at all, maybe I did something I don’t know but it was gross!
