Oatmeal Bites To Go, baking, recipe

These Oatmeal Bites To Go have the texture of a very moist muffin though they are flour-less. They would also be a great treat to send for class breakfasts (as they are nut-free too!).

FAMILY TRAVEL TIP: Make Oatmeal Bites To Go ahead of time and take them on your next overnight at a hotel – that way you can have these for breakfast in your room – it’ll save you $ instead of breakfast at a restaurant plus you know the kids will have had something healthy to start their day.

Oatmeal Bites To Go Recipe

Makes 24 mini oatmeal bites

1 1/2 cups rolled oats
1/2 cup brown sugar
1 container single serve applesauce
1 1/2 cups milk
1 egg
vanilla, salt, cinnamon (to taste – I do 2 tsp vanilla, pinch of salt, 2-3 tsp cinnamon)
1 tsp baking soda

Preheat oven to 350 degrees.
In a mixing bowl, combine oats, brown sugar, applesauce, milk and egg. Mix well.

Add in vanilla, salt and cinnamon. Then, add baking soda. Mix well.

Spray mini muffin pan with cooking spray. Spoon in oatmeal batter.
TIP: a mellon baller works perfectly to scoop batter into mini muffin pans.

Bake in 350 degree oven for 30 minutes. Store in an airtight container.
