Broccoli Casserole with Toasted Almonds

Broccoli Casserole with Toasted Almonds

Ingredients
  • 1/4 cup PC Country Churned Unsalted Butter
  • 1/4 cup PC Organics All Purpose Flour
  • 1 cup PC Aged 2 years Canadian white cheddar cheese (shredded)
  • 2 1/2 cups PC frozen broccoli florets
  • 2 1/2 cup milk
  • 1 tsp dried mustard
  • Salt and pepper (to taste)
  • Topping:
  • 1 tbsp PC country churned unsalted butter
  • 1 cup break crumbs (toasted)
  • 1/2 cup slivered almonds (toasted)
  • Pinch of paprika
Instructions
  1. In a medium saucepan, melt butter. Whisk in flour. Cook 2 to 3 min, stirring but not browning. Whisk in milk slowly. Bring to a boil. Stir in dried mustard. Reduce heat. Simmer gently 5 minutes. Add salt and pepper to taste. Stir in cheese and cook only until melted.
  2. Place broccoli in a buttered 12 cup casserole dish. Pour cheese sauce over top.
  3. TOPPING
  4. Melt butter in pan over medium heat. Add bread crumbs, almonds, and paprika. Sprinkle over broccoli and cheese sauce.
  5. Bake in casserole in a preheated 350F oven for 15-20 or until bubbling.

    It’s startling how many women have osteoporosis here in Canada. I try to make sure I get my daily dose of calcium and vitamin D. This recipe sure does look good.

    My mom is on the smaller side and I worry about her having osteoporosis. I know she takes calcium supplements but diet is important too!
