Broccoli Casserole with Toasted Almonds
- 1/4 cup PC Country Churned Unsalted Butter
- 1/4 cup PC Organics All Purpose Flour
- 1 cup PC Aged 2 years Canadian white cheddar cheese (shredded)
- 2 1/2 cups PC frozen broccoli florets
- 2 1/2 cup milk
- 1 tsp dried mustard
- Salt and pepper (to taste)
- Topping:
- 1 tbsp PC country churned unsalted butter
- 1 cup break crumbs (toasted)
- 1/2 cup slivered almonds (toasted)
- Pinch of paprika
- In a medium saucepan, melt butter. Whisk in flour. Cook 2 to 3 min, stirring but not browning. Whisk in milk slowly. Bring to a boil. Stir in dried mustard. Reduce heat. Simmer gently 5 minutes. Add salt and pepper to taste. Stir in cheese and cook only until melted.
- Place broccoli in a buttered 12 cup casserole dish. Pour cheese sauce over top.
- TOPPING
- Melt butter in pan over medium heat. Add bread crumbs, almonds, and paprika. Sprinkle over broccoli and cheese sauce.
- Bake in casserole in a preheated 350F oven for 15-20 or until bubbling.
