Cinnamon Swirl Coffee Cake Recipe

Trust me – this Cinnamon Swirl Coffee Cake Recipe is delish and easy!
Ingredients
  • 2 cups all purpose flour (or pastry flour)
  • 1/2 white sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup plain yogurt
  • 1/2 cup oil
  • 2 eggs
  • 1/2 cup brown sugar
  • 3 tsp cinnamon
  • 1 tsp cocoa
Instructions
  1. Pre-heat oven to 350C
  2. In a small bowl combine yogurt and baking soda. Mix together. Put aside to rise (it will double in size).
  3. In a mixing bowl, combine flour, sugar, baking powder. Sift well. Next, add in the wet ingredients of oil and eggs. Mix well. Then, add in the yogurt/baking soda mixture. Mix well until there are no lumps.
  4. In a small bowl: combine brown sugar, cinnamon, and cocoa for the cinnamon swirl mixture. Blend well.
  5. Spray a bundt pan with oil (you could also divide the mixture into muffins if your prefer – just adjust cooking time accordingly).
  6. Spoon in half the cake batter mixture into the bundt pan.
  7. Then, sprinkle over top the cinnamon swirl mixture – evenly covering the cake batter.
  8. Then, spoon (on top of the cinnamon swirl mixture) the remaining cake batter.
  9. Using a toothpick, swirl the batter around to move the cinnamon swirl mixture around the cake mixture.
  10. Bake at 350C for 40-45 minutes or until a toothpick inserted comes out clean.
