Chocolate Chip Loaf Cake Recipe

Chocolate Chip Loaf Cake Recipe

This Chocolate Chip Loaf Cake Recipe makes two cakes! Eat one and freeze one! Great for breakfast, brunch, snack, and dessert.
Ingredients
  • 2 cups sugar
  • 1 cup butter or shortening (I use 1/2 butter and a bit of applesauce)
  • 3 cups flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 4 eggs
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350C. Grease two loaf pans.
  2. Sift dry ingredients into large bowl.
  3. Cream butter and sugar.
  4. Add dry ingredients into butter/sugar mixture.
  5. Add in buttermilk.
  6. Mix well.
  7. Add in chocolate chips.
  8. Bake 60 mins or until loaf does not come out gooey when inserted with a toothpick.

Tip: If you don’t have buttermilk you can make it. Fill a measuring cup with 2% milk and add in 1 tablespoon of white vinegar. This will substituent for buttermilk in any recipe.

If you are baking with kids as a boredom buster – ensure everyone takes turns measuring, stirring, and pouring. I assign jobs “egg cracker” “flour pour-er” “chocolate chip sprinkler” so everyone is clear about what they get to do. Plus, it’s fun. I leave the egg cracking to the bigger kids (less mess). And yes, the chocolate chip sprinkler (a little kid job) gets to do some taste testing. 🙂
