Easy Coffee Cake Recipe

This is my go-to recipe for play date snacks, school lunch treats and coffee dates with grown-ups (which, sadly, happens less often than kid play dates). I often get the kids in on making this easy coffee cake recipe – making it a family activity.

Easy Coffee Cake Recipe

You will need:

1 cup of vanilla yogurt
1 tsp baking soda

2 cups flour
1/2 cup sugar
1 tsp baking powder
Pinch of ground flax seeds (make fiber your friend!
2 eggs
1/2 cup vegetable oil
1/2 cup milk

2 tbsp brown sugar
2 tsp cinnamon

Bundt pan

2 bowls
Cooking spray

Directions:

In 1st bowl mix together yogurt and baking soda. Set aside (it will double in size).

Tip: have kids measure, pour and mix the ingredients.

In 2nd bowl mix together dry ingredients. Then add eggs, milk and oil. Mix well.
Then, add yogurt/baking soda.

Spray bundt pan with cooking spray. Spoon in half the batter. Sprinkle brown sugar/cinnamon mixture. Then layer remaining batter on top of brown sugar/cinnamon.

Bake in pre heated 350 oven for 45 minutes.

Serve with hot chocolate and you have a great après school or après skating snack!

    Wow, does this recipe bring back memories for me. My grandmother use to make coffee cake and it was the best tasting dessert I’ve ever had and I haven’t had it since I was little. I actually forgot all about it until I saw this recipe. Thank you for this recipe and memories. This is definitely going into my recipe collection!
