Applesauce Oatmeal Blender Muffins breakfast to go!

TIP: an ice cream scoop is the perfect tool to spoon muffin mixture into muffin pan!

Applesauce Oatmeal Blender Muffins Recipe

  • 1/4 cup water
  • 2 apples (skin on – cut into cubes)
  • 4 cups flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/4 quick cooking oats
  • 2 tsp cinnamon
  • 3 eggs
  • 1 cup milk
  • 1/2 oil
  1. Preheat oven to 350 degrees.
  2. In a blender, add water with 1/2 of the apples. Blend until liquid. Add in remainder of apples. Blend until liquid. Set aside.
  3. In a large bowl – combine flour, sugar, baking powder, baking soda, oats and cinnamon. Mix well.
  4. Add in eggs, milk, and oil. Mix well.
  5. Add in applesauce mixture from blender. Mix well.
  6. Spray muffin liners with cooking spray. Spoon batter into muffin liners.
  7. Bake in 350 degree oven for 30-35 minutes. Store in an airtight container.

Granola Breakfast Muffins

The thing I like about muffins is serving size. One muffin = 1 snack. Makes life easy n’est pas?! Plus, muffins are a healthy choice to send for those class breakfasts (where you have to send a portion of something for the whole class). No need for knives and cutting up of things. Single serve. Also, muffins are a great idea for sport snacks (one big container of muffins for the team to enjoy after the game or practice!).

    my question is, are those the silicon muffin cups? LOL if so, how do you like them? I have two silicone items that I just love and wondered about those in the picture.

      They are silicone muffin cups and they are awesome! I use them all the time and highly recommend. I love being able to wash and re-use them (more eco friendly than paper) and they make pan clean up so much easier (as not spraying the pan itself means less to clean). Great results every time.

    I’m not baking a lot these days. Notice he needs and how much I like applesauce and oatmeal I’m going to try these. We’re going to trip in a couple weeks and I need some snacks.

    I recently tried a similar recipe but yours is better because you use real apples so I’m guessing it gives a little crunch which I think is better

    Just baked a batch of these, thinking they’d be a good alternative to pre-packaged snacks for my son to take to school. The flavour is okay, but I found them to be extremely dry. i followed the recipe – maybe I overbaked? (30 mins @ 350 degrees)
