Easy Fall Meals

From soups to baking, I have been cooking up a storm of Easy Fall Meals lately. Shorter days and chilly-er weather are inspiring me to go back to comfort foods. Creamy chicken rice soup. Quick and easy pasta. Homemade banana bread. Yum!

Creamy Chicken Rice Soup

One of our FAVOURITE easy fall meals is this one (though, you could call it a sort of stew…it’s thick, creamy, warming, and just comfort food at its best). My toddler devours it.

Creamy Chicken Rice Soup

You will need:

  • Easy Fall Meals1 box of chicken broth (900 ml)
  • 1 leak chopped
  • 1 cup of cut carrots (or make life easier and buy shredded carrots!)
  • 1 tbsp flour
  • 1 cup brown rice
  • 1 cup cooked chicken (you can omit if you don’t have any on hand)
  • 2 cups water
  • 1 tbsp butter
  • salt and pepper to taste
  1. Heat pan on Frigidaire Induction Range to 7.
  2. Add butter
  3. Add leaks and carrots. Saute for 2-3 minutes.
  4. Add flour. Raise temperature up to 9. Saute for 1 minute
  5. Slowly add in chicken broth – stirring to get all the yummy bits off the bottom of the pan.
  6. Add in water
  7. Bring pan to a boil.
  8. Add in brown rice.
  9. Lower Frigidaire Induction Range to simmer for 15 minutes.
  10. In the last 5 minutes of cooking – add in cooked chicken.
  11. Done!

So good on its own and it freezes really well!

The following is a true story about our recent Easy Fall Meals…

Frigidaire Induction pasta

We were coming home from a long road trip one Sunday night. Kids were tired. We grown ups were tired. Everyone was hungry. My dear husband suggested we order something as soon as we get home. My response “It’ll take an HOUR for something to be delivered…I don’t really want to cook…but I can have pasta on the table in about 10 minutes.” Dinner impossible you say?

In 10 minutes…I had water boiled, sauce on, pasta cooked. It was quicker than delivery and take out (and so much yummier really!).

And the baking…well, you know I ventured out of my box when I made Meringue Ghosts and they were such a win (so evenly cooked yet so easily made). However, for everyday baking, I’m returning to my know-by-heart recipes.

Banana Bread Recipe

You will need:

  • Frigidaire Banana Bread2 ripe bananas (I keep mine in the freezer
  • 2 cups of flour (I like a flax/flour mix myself)
  • 1/2 cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 cup of milk
  • 1/2 cup oil
  • splash of vanilla
  1. Set Frigidaire Induction Range oven to 350C.
  2. In an electric mixer, mix bananas and sugar.
  3. Add in flour and sugar
  4. Add in baking soda and baking powder
  5. Mix well.
  6. Add in 1 cup of milk, oil and vanilla.
  7. Add in eggs.
  8. Mix well (no lumps please and thank you).
  9. Spray bundt pan.
  10. Bake at 350
  11. Set timer for 45 min.

    home-made meals are so much nicer than take-away and much healthier too. My son always bakes Banana Bread, he loves it.

    Thanks for sharing the recipes. I too have been busy cooking these days, must be the time of year. Made a big pot of homemade vegetable beef soup today for the freezer.

    The soup sounds delicious! I love using leeks in cooking! We just made a huge batch of slow cooker butter chicken; yumm!

      I cut leeks right away and freeze them in in cup-sized ziplock bags. Kind of a prep-ahead thing for me.

    slow cooked savory meals are the best. Will try the Creamy Chicken Rice soup. I have never cooked on an induction range. Saves time, energy and safe too I bet
