Getting back to school and out the door can be trying. Try (see what I did there) this Easy Overnight Oats Small Batch Recipe because it’s nutritious and delicious.
Kid-activity: I love including kids in the kitchen – and this is a great no-cook breakfast kids can practice their kitchen skills. Plus, add in literacy by having the kids read out the ingredients, measure the ingredients, and pour into the cup (then double check reading the recipe to ensure all the correct foods got in there!).
OR
Make this a parent-makes-it-after-the-kids-go-to-bed breakfast: because sometimes we just need to get the kids to bed asap. This grab-and-go breakfast comes togther in minutes so you can easily put this together the night before.
Easy Overnight Oats Small Batch Recipe – Ingredients
- ½ cup Quaker Oats (I used large flakes)
- ½ cup milk (dairy or plant-based milk)
- 1 tablespoon chia seeds (optional)
- 1 teaspoon maple syrup or honey
- ¼ teaspoon vanilla extract or a pinch of cinnamon (optional)
- Pinch of salt
Directions
- Measure and pour each of the ingredients into a jar (I use a clean jam jar – because reduce and reuse!)
- Combine all ingredients in a small glass jar or airtight container. Stir well until the oats are fully coated and no chia seed clumps remain.
- Cover the jar with a lid and place it in the refrigerator for at least 2 hours, or ideally overnight.
Personally, I’m a warm oatmeal person which is why overnight oats have turned me off in the past. However, with this oatmeal recipe, the morning of…I removed the top and put it in the microwave for 15 seconds…just enough to make it room tempreture. It was yummy.
It’s also a good mid-morning snack idea for parents at the office. Or take it to the soccer game for a fuel up while you watch the kids play.
