Mother’s Day is a special occasion to celebrate and honor mothers. Hosting a high tea is a delightful way to make her day even more memorable. Here are some easy-to-make, elegant recipes to create a high tea she’ll cherish.

1. Classic Cucumber Sandwiches

  • Ingredients: Fresh bread, cream cheese, cucumber, and dill.
  • Instructions: Spread cream cheese on bread. Thinly slice cucumber. Layer cucumber on top. Add a pinch of dill. Cover with another slice of bread. Cut off the crusts. Serve in triangles.

2. Smoked Salmon Canapés

  • Ingredients: Crackers, smoked salmon, lemon, and cream cheese.
  • Instructions: Spread cream cheese on crackers. Top with smoked salmon. Squeeze lemon juice over the salmon. Garnish with dill. Arrange on a plate.

3. Scones with Clotted Cream and Jam

  • Ingredients: Flour, butter, sugar, milk, clotted cream, and jam.
  • Instructions: Mix flour, butter, and sugar until crumbly. Add milk to form dough. Roll out dough and cut into circles. Bake at 400°F for 12-15 minutes. Serve with clotted cream and jam.

4. Egg Salad Sandwiches

  • Ingredients: Boiled eggs, mayo, mustard, and bread.
  • Instructions: Mash boiled eggs. Add mayo and mustard. Mix until smooth. Spread on bread. Cut the sandwich into small squares or triangles.

5. Lemon Drizzle Cake

  • Ingredients: Flour, sugar, butter, eggs, lemon zest, and juice.
  • Instructions: Mix butter and sugar. Add eggs one at a time. Stir in flour and lemon zest. Pour batter into a greased pan. Bake at 350°F for 35-40 minutes. Drizzle lemon juice and sugar mixture over the warm cake.

6. Fruit Tartlets

  • Ingredients: Mini tart shells, custard, and fresh fruit.
  • Instructions: Fill mini tart shells with custard. Arrange fresh fruit on top. Chill in the fridge. Serve cold.

7. Mini Quiches

  • Ingredients: Pie crust, eggs, cream, cheese, and vegetables.
  • Instructions: Whisk eggs and cream. Add cheese and veggies. Pour into mini pie crusts. Bake at 375°F for 20-25 minutes. Let cool before serving.

8. Tea Selection

  • Suggestions: Offer black, green, and herbal teas. Serve with lemon, honey, and sugar. Keep the water hot.
