Twice Baked Potatoes Recipe

This easy (and delicious) Twice Baked Potatoes Recipe is the favourite side dish of my daughter. It’s a great make-ahead dish which also freezes. Serve it as a side dish for your next family meal or as a main dish when you add bacon….my daughter even eats it as an after-school snack…

Twice Baked Potatoes Recipe

Twice Baked Potatoes Recipe

Personally, I double this recipe for my family. That means 4 baking potatoes = 8 halves. There might be one or two halves left over for lunch the next day. If I’m hosting another family for dinner with us…I’ll do 6 large baking potatoes (= 12 halves).
Ingredients
  • 2 baking potatoes
  • 1/2 cup sour cream (or 2% milk)
  • 2 cups shredded cheddar cheese
  • 1 garlic clove
  • pepper (to taste)
Instructions
  1. Pre-cook baking potatoes (I wash them. Pierce with a fork on both sides. And microwave for 9 min on high)
  2. Allow baking potatoes to cool.
  3. Using a knife, cut baked potatoes lengthwise in half. Using a spoon, scoop out the potato insides (be careful not to break skin). Put inside part of potato in bowl. Set potato skins aside on a cookie sheet.
  4. Mash potatoes. Add sour cream (or milk), garlic, 1/2 of the shredded cheese, and pepper (to taste).
  5. Spoon potato mixture into potato skins.
  6. Cover with remaining shredded cheese.
  7. Bake in a pre-heated oven (350C) for 15-20 minutes (or until cheese is melted).
 Add ons- you could also top potatoes with cooked bacon bits, chopped ham, onion flakes.
My Twice Baked Potatoes Recipe is delish for any season. You could make it as a side dish, vegetarian meal (omit the bacon/ham), or as a gluten-free option for you or your guests.
Side story: My Mom used to make Twice Baked Potatoes in big batches, freeze them individually, and send them with me to put in my freezer at university. It was a fantastic student meal (yes, I would make it a meal) in between classes.
