Apple cinnamon granola bars

I made these Apple cinnamon granola bars just the other night and they are delish!  Bonus points: they take 5 minutes to “bake. Yes, five minutes. This is totally a kids in the kitchen recipe. Also an I have nothing for school snack recipe.

Apple cinnamon granola bars

By the way…this is a microwave recipe. Yep. Throw the ingredients in a bowl. Mix. and microwave. Easy breasy. Homemade (and healthy) school snacks (nut-free too) in minutes! Also, great with vanilla yogurt for breakfast.

COOKING WITH KIDS TIP: have kids read the recipe. Follow directions. Measure. Pour. Stir. Personally, I leave the removing of apple skins and cubing of apples to do myself (safety – knives). Also, I do let kids push the microwave buttons to set the time. However, only adults should remove the apple cinnamon granola bars from the microwave because the pie plate does get hot.

You will need:

  • one apple (no skin – cut into cubes)
  • 2 cups quick cook oats
  • 1 tbsp flour
  • cinnamon (to taste)
  • 1/4 Brown sugar (can substitute maple syrup or honey – I actually don’t like “sweet” granola bars so I only use 2 tsp of honey)
  • 1 egg
  • glass pie plate
  • bowl, knife, spoon, microwave
  • *Note: there is no butter/margarine in this recipe – more on that below*

Remove skin from apple. I used a medium size gala apple for these apple cinnamon granola bars.

Cut apples into cubes.

Into a bowl pour…oats, flour, cinnamon. Mix well. Add in apples. mix well to coat.

Scramble one egg…add to oat mixture. Add in brown sugar (or honey). Mix well until everything is moist. Pour into glass pie plate. Pat down firmly.

Microwave on high for 5 minutes.

Put on gloves to remove pie plate (it’ll be HOT).

Cut while warm. The triangle may break apart once cooled (because there isn’t butter holding it together). Add butter (or margarine) if you really like a “bar” like granola bar. I’m OK with this turning into granola pieces because they are perfect for snack size snacking.

    I love that you cut it into wedges. I know that rectangular bars is standard, but I need a little variety in my granola bars.
