Hearty Chicken & Veggie Salad

Dinner in under 15 minutes. Yes, it is possible! I created this Hearty Chicken & Veggie Salad recipe as a go-to full meal for those nights of soccer practice/late night work/school recital/*insert busy family activity here*. It is fast, delicious, and healthy. And made in under 15 minutes….

Hearty Chicken & Veggie Salad

Hearty Chicken & Veggie Salad

Serves: 4
Dinner in under 15 minutes. Yes, it is possible. I created this Hearty Chicken & Veggie Salad recipe as a go-to full meal for those busy family nights. It is fast, delicious, and healthy. And made in under 15 minutes….
Ingredients
  • 1 romaine lettuce (washed and cut)
  • 1 cup shredded carrots
  • 1 package of Maple Leaf Prime Chicken Strips (we loved the Italian!)
  • 1/2 cup cut cucumber
  • 5 white button mushrooms (washed and sliced)
  • ¼ cup white onion (totally optional if you don’t like onions – like me)
  • ¼ cup green olives
  • Radishes (to taste)
Instructions
  1. Wash and cut romaine lettuce. Sprinkle on top shredded carrots, mushrooms, onion, olives, radish. Place Maple Leaf Prime Chicken Strips in microwavable dish and warm according to package directions. Carefully, remove Maple Leaf Prime Chicken Strips from microwave and spoon over salad.
  2. Serve with homemade vinaigrette or balsamic vinegar & oil.
  3. Serve with bread.
  4. Makes a great lunch too!

This Hearty Chicken & Veggie Salad had everything a busy family like mine needs to a good meal. Chicken (protein!), veggies (vitamins & minerals!), and some side bread for a bit of carbs. Even my in-laws, who are huge foodies (they are French!), regaled at how good this salad was. It was good! And my Easy Vinaigrette Recipe went so well with this Hearty Chicken & Veggie Salad. Just sayin’ 😉

Maple Leaf Prime Strips

We often think fast food is not homemade food. This meal was made in under 15 minutes yet was still made at in my kitchen. June Cleaver would totally agree with me – that it is ok to make your dinner-making easier if you can – especially on busy nights. The shredded carrots saved me time. The Maple Leaf Prime Chicken Strips came fully cooked and ready to serve.

Idea! Add shredded carrots, chicken broth, egg noodles and those chicken strips and you have a hearty – and homemade – chicken noodle soup in under 15 minutes.

Give yourself permission to make dinner easier (because no one ever regretted making a quick healthy, hearty, meal).The whole point of dinner (and June Cleaver would approve of this) is that you are together as a family eating a healthy meal. June doesn’t care how long you slaved in the kitchen to get the meal on the table (and actually…neither does your family).

      You could use leftover pasta, a little olive oil and add the Maple Leaf Prime chicken and you’d have a great pasta salad (great warm or cold!)

    ok now this is a salad i would enjoy!!! looks absolutely delicious. We always have the same salad (caeser) but definitely looking to change it up a bit. this is perfect. I can have it for my lunch too 🙂

    This looks awesome, I’m a new member of weight watchers, so I have to change the whole way I eat and I think I just found an awesome salad, thanks for sharing, the only difference I would make is probably would use red onions in place of reg. onions!!
