Paella Valencia is a famous Spanish dish, the signature dish of my husband’s family. Every family gathering they make a huge paella which combines rice, seafood, chicken, rabbit and vegetables. It’s not just a meal but an event. Really. The last paella of summer, I took pictures to make this gallery of how to make a Paella Valencia.

So back the paella. Yes, my husband’s family is actually from Valencia, Spain so this is authentic. The traditional paella has rabbit but it’s not always available at our grocery store (we once freaked out a cashier when we did buy a rabbit…“ewww, I have a pet rabbit at home!” ).
This looks delicious! When I came back form Spain this summer, I vowed to learn how to cook my favourite Spanish dishes, including Paella. Thanks for the reminder!
