Easy Rice Salad

This Easy Rice Salad recipe is a great side-dish, vegetarian option, and pot-luck food. It’s good for summer time as it can be eaten cool or room temperature and you can make it ahead. Lots of variation options…you will love this Easy Rice Salad…

Easy Rice Salad

Easy Rice Salad

You will need:

  • 2 cups of cooked rice
  • Red pepper (diced into small squares)
  • Red onion (diced into small squares)
  • 1 can of black beans

Simple pre-cook the rice according to package directions, dice the red pepper and rinse the black beans. Put it all together in a bowl. Make up a batch of my Easy Vinaigrette Recipe. Pour Vinaigrette on rice salad. Cover salad. Let it sit at room temperature for an hour or put it in the fridge for overnight.

Note: you can use brown rice or white rice for this easy recipe.

Variations – add a mix and match of these to your rice salad:
  • can of tuna
  • boiled eggs (cut up)
  • chickpeas
  • sweet corn (canned or cooked)
  • red or green pepper (or both)
  • sweet onion
  • cucumbers (cut up)

This is also a go-to dish for crazy dinner night…when I have to run kids to soccer. I can make this during my lunch hour, pop it in the fridge, and then eat it before or after the game. Much healthier option than eating cookies (which I’m opt to do if there’s nothing made and I am super hungry getting home from something).

It also packs great with an ice pack for an office lunch.

If I’m hosting a bbq, you will always find a rice salad on the table. Or you can separate the ingredients have have people “build your own salad”. It’s almost like summer comfort food. And a nice alternative to green salads and pasta salads.

    I’d really love this with chick peas! I’ve never made a rice salad or ever had one come to think of it, but it would be great on a hot day. Thanks for the inspiration!

    This sounds deicious and the black beans would make it really healthy by adding fibre.I love rice and will definitely try this recipe with the vinegrette salad dressing. 🙂
