How To Make Rainbow Icing

This How To Make Rainbow Icing recipe is so easy! You could also call it unicorn icing or fairy frosting couldn’t you?! It looks pretty and tastes delish (bonus points: it’s vegan and gluten-free too — but you don’t compromise on taste at all). Also, you could totally make this part of your birthday party activities (ideas below…)

How to make rainbow icing unicorn icing fairy frosting via www.parentclub.ca

Ingredients for Rainbow Icing:

(makes enough for 12 large cupcakes)

  • 1 cup (500mL) vegan butter substitute
  • 3 1/2 cups organic icing sugar
  • 1/4 cup unsweetened coconut milk
  • 1 tsp (15mL) PC® Madagascar Bourbon pure vanilla extract
  • Food colouring

  1.  In a large mixing bowl, add softened vegan butter and whip with a hand mixer or stand mixer for 3 min to until it becomes a fluffy texture
  2. Slowly fold in one cup at a time of the icing sugar, and when all is added, whip again at a low speed for a few minutes until the texture is consistent
  3. Add in the coconut milk and vanilla extract, and whip again for a final 2 minutes
Rainbow Icing Instructions:
  1. Separate the icing into 6 small bowls
  2. Add food colouring to each to make the colours of the rainbow (red, blue, yellow, orange (red +yellow), green (yellow + blue), and purple (blue + red)
  3. Place the contents of each bowl into a separate piping bag and snip the ends
  4. Lay a piece of plastic wrap on the counter and pipe a line of each colour right beside each other, in the order of the rainbow (red, orange, yellow, green, blue, purple). Leave at least 2” of plastic wrap at each end of the piped lines
  5. Carefully roll the icing into a tube by lifting each parallel end of the plastic wrap
  6. Twist each end of the plastic wrap, and snip one end right where the icing begins
  7. Place the rainbow tube into a fresh piping bag, cut side down, and pipe out colourful rainbow swirls

You could make rainbow icing a birthday party activity (I’d say for ages 6 and up). Simply make the rainbow icing ahead of time. Then, cut a rectangle of plastic wrap and put it on each child’s place at the table. Pass down each colour of icing and let the kids pipe a line onto their plastic wrap (as in instructions above). Once the icing is twisted and the bag is snipped…the kids are ready to decorate their cupcakes.
