Easy Family Meals

I know I have June Cleaver issues. I strive for that 50’s-esque perfect life of happy family/organized home (most days failing). Sunday to Thursday – I cook, clean, launder and tidy…until Friday. Friday is modern-Mom day. I don’t cook on Fridays – June aspirations get the day off. Yet, we still have easy family meals…

I cook, homemade-from-scratch, 6 nights a week – because I can (it’s a gift my kids will never know they got…a homemade meal most nights). But I grant myself permission to have sandwiches on Friday nights. Why not?! They are easy, healthy, fast – and have very little clean up (#win).  Would June approve of my Crazy Dinner nights? Would she smile at my ideas for an Easy Sunday Brunch?

A few sandwich ideas which I found on butterball.ca…

Northwoods Maple-Mustard Turkey Sandwich

TBLT Sandwiches

Italian Saltimbocca Sandwich

The Italian Saltimbocca Sandwich inspired me to take this meal and make it my own. What do you think of my turkey/provolone cheese meal in minutes?Turkey Sandwich
You will need:
  • french bread sliced
  • butter
  • turkey deli slices (I recommend Butterball)
  • provolone cheese sliced
  • cucumbers sliced
  • carrots mini

Directions:

Butter bread and place it on hot grill pan. Layer turkey and provolone. Top with 2nd piece of butter bread. Grill and you are done (remember to flip it please).

It was delicious! Easy! Healthy! The perfect trifecta to make Friday night family dinner better.

I’m sure June would approve.

    Looks good to me June! lol Its always good to have a night off from cooking, sort of a mental health day really!

    I grew up having a home COOKED meal every night. Sandwiches “feel” wrong but are oh so right in this busy modern Momhood
