This Potato Bacon Quiche is an easy 30 minute meal for families. It also could be cut into squares and served as an appetizer for your next get together. Just take 4 ingredients which you probably already have in your fridge and turn them into this yummy Potato Bacon Quiche…so easy…and so good…
Potato Bacon Quiche
You will need:
- 6 eggs
- bacon
- 1/2 bag of hashbrowns (you could peel and cook potatoes…but frozen hashbrowns keep the cooking time under 30 minutes. Plus, they are super easy!)
- splash of milk
Preheat oven to 350 degrees
- Cut bacon into small-ish pieces (I have scissors which are exclusively used for food however you could use a knife and cutting board)
- In a bowl, crack eggs.
- Add in a splash of milk (i.e. about 1 teaspoon)
- Using a fork, mix eggs and milk together well.
- Add in 1/2 bag of frozen hashbrowns into the egg mixture. Combine well. Salt and pepper to taste. Mix again.
- Spray 8 inch pie plate with cooking oil.
- Pour egg/hashbrown mixture into pie plate
- Sprinkle cut bacon around egg mixture.
- Bake on centre rack of over for 30-40 minutes or until eggs are set.
- Serve warm immediately or cool and pack into an airtight container. Yes, you can eat it cold as well.
Switch up this recipe and make a Broccoli Bacon Potato Quiche.
Broccoli Bacon Potato Quiche
- Microwave 1/4 cup of broccoli with 1 tsp of water in microwave safe bowl. Once cooked…chop up broccoli.

- Add in chopped broccoli
- Add in 1/2 bag of frozen hashbrowns into the egg mixture. Combine well. Salt and pepper to taste. Mix again.
- Spray 8 inch pie plate with cooking oil.
- Pour egg/hashbrown mixture into pie plate
- Sprinkle cut bacon around egg mixture.
- Bake on centre rack of over for 30-40 minutes or until eggs are set.
- Serve warm immediately or cool and pack into an airtight container. Yes, you can eat it cold as well.
The tomato tuna salad above is one of many easy side dish ideas which would go very well with either of these quiches…and with a quiche and a salad you have a complete meal! A quiche is an easy (yet delicious) 30 minute homemade meal using ingredient staples you already have in your fridge. 🙂
