Easy Applesauce Muffins

Some recipes are memorized simply because they are so easy. This is one of them. My easy applesauce muffins are dense, moist, and yes…a bit healthy (wheat bran, ground flax…it is good to make fibre your friend!). Great for a grab n’ go breakfast, mid-day snack with a cup of tea, or after-school treat. You’ll want to memorize this one too…

Applesauce muffins Easy

Family Activity ALERT: Get your kids in the kitchen and make these easy applesauce muffins together! Kids can measure, pour, and stir. (I advise cracking the egg yourself…no good ever came of a toddler cracking an egg).

Easy Applesauce Muffins

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground flax
  • 1/4 cup what bran
  • 1 tsp cinnamon
  • 1 cup milk
  • 1 individual applesauce (a lunch box single serving size)
  • 1/4 oil
  • 2 eggs
  • splash of vanilla

Preheat oven to 350 C.

In a large bowl, combine the dry ingredients. Then, one-by-one add in the wet ingredients.

TIP: Baking with kids? Make one child in charge of dry ingredients and the other in charge of wet ingredients. That way everyone has their own responsibility and there’s no fighting-while-baking.

Mix batter until smooth (I use an electric mixer for this).

Line muffin tin with liners (I use silicone ones because I like being able to wash and reuse them – eco-friendly!).

Using an ice cream scooper (yes, an ice cream scoop!), scoop batter and drop it into muffin liners (one scoop is the perfect amount!).

Bake at 350C for 20 minutes. Makes 12.

      Exactly – and I find it cuts down on the amount of oil you have to use.

      Applesauce is a great substituent for cooking oil. It makes the muffins moist!

    I recently found a different apple sauce muffin recipe and I have to say I like yours better simple because yours is healthier, so thanks because I’m trying to eat healthier.
