Basic Muffin Mix Recipe
Preheat oven: 350 | Bake: 22 minutes | Makes 12 large muffins

- 2 cups of all purpose flour
- 1/2 cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 cup ground flax seed (optional – but it’s a good fibre boost)
- 1 cup 2% milk
- 1/2 cup oil
- 2 eggs
- 1 tsp vanilla
- In a large bowl mix dry ingredients.
- Add in wet ingredients.
- Mix together.
- Spoon into greased muffin pan (I like to use silicone muffin liners) and bake.
In my last batch, I spooned half-a-spoon of batter into each muffin cup – then sprinkled on a layer of brown sugar and cinnamon – then spooned another half-a-spoon on top. They were a family favourite for breakfast the next day!
You could use this basic muffin mix recipe to make GRANOLA BREAKFAST MUFFINS (also a family favourite).
Basic muffins are so versatile. Not only can you customize the flavours (add chocolate chips, nuts, orange zest) but you can also munch on them at different times of the day…breakfast, school snack, after school, before sports, or dessert.
This recipe also doubles really well. So you can double all the ingredients to make 24 large muffins – then put 12 in an airtight container and store the freezer for up to a month – and enjoy the other 12 for breakfast and snacks. Eating these muffins this week?…store them in an airtight container to keep them fresh…they will keep for up to a week.
